Audacity is a very popular free, open-source option -
http://audacity.sourceforge.net/
Great for a lot of basic recording tasks.

I have a friend using the software from
http://www.tracertek.com/
for his vinyl & cassette conversions. He upgraded versions to their latest not too long ago (DC 7 I believe it is), and has nothing but good to say about ease of use and quality of end result. He is more of a techno than I, but I'll probably try it when I get caught up to where I can start the process. Something you might look into anyway. Not cheap, but suppose it's all in what you want the program to do, and what it can do.
