WHat gauge? O, G, HO, N? There are many good specialized  companies these days.

Really I think your first decisions are 1) do you want new/modern (say marklin) or classic/collectible (basically lionel, but not their modern stuff), and 2) how much room are you devoting to it, 3) does your insurance cover mental issues-train collecting is insanity    I've known people who have moved to larger houses in part to accommodate their trains.

Thanks for the suggestions and resources. Classics are the ones I like, nothing massive but something I can put on a sheet or two of plywood in the garage. Maybe the standard size train set would fit the bill.

Search online - there are plenty of layouts.  You're looking for lionel O gauge if you want classic.

Or if you're just looking to get a layout going, I think there are new starter sets.  That might be the best way to go.
