If you have a source that is a real balanced design feeding to a real balanced device, XLR's seem to make sense.

This!  Balanced cables are great if the equipment that they're being plugged into is fully balanced.  Some manufactures include XLR inputs on their gear even though that gear isn't a fully balanced design.

In a pro audio environment where there's potentially a ton of electrical interference, xlr cables are a better at rejecting electrical interference.  But that type of interference is far more prevalent in the types of venues where pro audio setups are used and long cable runs are common.  In a home, far less prevalent in most cases.
