Chocolate Chili Recipe

The other day at a Super Bowl / Chili Cook-off Contest Party, I entered this chili and won first place (out of 12 chili entries and 30 voters):

•   2 tablespoons ev olive oil
•   2 yellow onions, chopped
•   1 vidalia onion, chopped
•   1 head garlic, roasted, peeled and minced
•   1 yellow bell pepper, chopped
•   1 orange bell pepper, chopped
•   2 # beef stew (or lamb) meat, cubed
•   2 # spicy turkey sausage meat, chunked
•   4 slices applewood smoked bacon, cut into 1-inch pieces
•   56 oz tomato sauce
•   12 oz tomato paste
•   2 (14 oz) cans black beans, rinsed and drained
•   2 (14 oz) cans dark red kidney beans, rinsed and drained
•   7 oz can chipotle peppers in adobo sauce
•   2 cups beef broth
•   12 oz dark beer (e.g., Young’s Double Chocolate Stout)
•   1 tbl honey
•   2 tbl chili powder
•   2 tsp crumbled dried oregano
•   1/2 tbl fresh-ground black pepper
•   2 tsp salt
•   2.5 oz dark chocolate bar (darkest you can get)

Directions:
1. Fry bacon pieces in a large deep pot over medium-high heat. Carefully add oil and heat. Add onions, garlic, and bell peppers. Cook and stir until onions are transparent, about 5 mins. Add meats. Cook until meats are evenly browned. Drain the fat, if any (I don’t).
2. Puree chipotle peppers in adobo sauce with some of the tomato sauce in blender. Only use ½ of the can to reduce heat. Otherwise, this is a burner.
3. Stir in the rest and bring to boil. Reduce heat to low and simmer for 2 hours.
4. Suggested serving topper: sour cream.

Warning: This is a hot chili. The winning recipe was made with full can of chipotle peppers. Very tasty and addicting. Also, this is not cheap to make.
