I think he’s asking if there are other/better types of knives for various types of meat. Steak knives are fine especially for tougher cuts of red meat, but they usually have coarse serrations which may not be good for meats that aren’t tough. The coarse serrations tend to shred the meat versus cut it cleanly. Like most folks, I’ll just use a fork and whatever knife I can get my hands on. But maybe this isn’t “appropriate” if you’re entertaining dinner guests. It’s a valid question.
