I’ve played the drums on and off for years but I didn’t see my two

My two favorite jazz drummers are Sonny Payne and Shelly Manne.

The unsung drummer that I really like is Joe Vitale. I noticed his drum work because I recently got into Joe Walsh but his main body of work is with CSN. It's not necessarily spectacular work - I just really like the inventiveness.

I also like a lot of what John Guerin did- though I'm not too familiar with a lot of his work since there's so much of it.

Jeff Hamilton and Shelly Manne

Like Manne, Hamilton is outstanding on brushes and is even better than Shelly was in a small group of 3 or 4 or when backing a singer. Perfect time keeping, taste, sensitivity and the ability to listen to what everyone else is doing and react accordingly. He also swings like a mad man and can drive a big band (eg., Clayton-Hamilton Jazz Orchestra).

Glad to see Jeff Porcaro and Simon Phillips mentioned. Both are (were in Jeff's case, sadly) masters of tricky time signatures.
First time I remember seeing Simon Phillips is when he played on tour with The Who in the late 1980s. They did a benefit performance of Tommy that was broadcast on network TV for some reason. I don't remember much about it other than being spellbound by Simon Phillips. I recall one time in particular when he executed some jaw-dropping fill and Pete Townshend turned to give him a big grin. Would love to watch that performance again sometime.

Glad to see that someone mentioned Dave Mattacks, of Fairport Convention fame, Dave did some impeccable drumming for them as they migrated from a pure folk to folk rock and helped establish the british folk rock style.  His drumming on Sloth on their live album (my candidate for best live album ever) is astonishing in its breadth and fluidity.   the other brit that was doing some fabulous things with odd timings but very steady rhythms was Clive Bunker of Jethro Tull.  His drumming on the Stand Up, Benefit and Aqualung albums is absolutely spot on with some very tricky rhythms.
Obviously, the already mentioned Baker, Bonham, Moon trio but no one has mentioned Charlie Watts and the crucial role he played in the Stones, think of Satisfaction without that beat, Honky Tonk woman and many others.  Not technically the best, which also includes Ringo, but always served his band beautifully.

Yes, Dave Mattacks...I believe he did a stint with Jethro Tull as well.
And speaking of Jethro Tull, any list of epic drummers would be incomplete without Barriemore Barlow.

Marco Minneman who plays for Steve Wilson's group.
Gavin Harrison who plays for Porcupine Tree.

Both have very intricate styles (probably dictated by Steve Wilson who is common to both groups).
