Vinnie Bell’s incomparable 5-note solo on Keith’s 1967 classic, 98.6. Maybe not a guitar solo per se, but transcendent just the same.

I've been pretty smitten by Jesse Cook lately.  Not your classic rock and roll solo but every bit as sweet to me.  Second would be some Pink Floyd although Eric Clapton also does it for me.
If you like Jesse Cook, you will be doubly smitten by Paco de Lucia.  He was sort of an earlier, more classical version of Cook.

Christopher Cross - Ride Like the Wind

I saw him live in Melbourne back in 1996 or 1997.  Great show and I was amazed at his virtuosity on the guitar.  As a singer? He's OK.  As a songwriter and musician, he is phenomenal! 

Love to see him again.  🎸

First one that came to mind is Garcia's solo on Hard to Handle from the Ladies and Gentlemen The Grateful Recording from the Filmore. Beautifully developed.
