Propstuff is (mostly ;-) right - the difference is that SS can be polished to the point it has a better finish than Chrome...and you'll have a very hard time getting chrome to stick to SS.
Talk to the guys doing the cutting, see if they can recommend a good sheet metal polishing shop...then take the cut bits in and get a quote on bringing the parts polished to a "BA" (Bright Annealed - shiny SS finish.....but easily used as a standard) finish.
We'd charge about 30-40 mins to do a job like this...so check their chargeout rates and compare it against the quote :-)
Other possibility is Electropolishing - this however tends to be a bit more specialised.
