what happens lets say(to the sound) if you use a 10+ cord on 140/280 watt 8 ohm/4ohm amp vs. a 7+

While the "Ten Plus" is still considered beefy at 10 AWG, you may get better and deeper bass response with better dynamics with the very beefy 7 AWG "Seven Plus", designed for amplifiers and power conditioners with large current demands.
