Who has cooked with Tallow?
I'm going melt some with roasted garlic paste and brush on some prime New York strips over charcoal today.

I baste with Wagyu tallow & Ghee combo for ribeyes & Tri tip on the SM pit lately. Very good. Distinctive so I’m getting tired of it and thinking of switching to something else. Again.

  • To whom more was given more will be required.

By health I use only pig fat(inexpensive) and coconut oil.
Tallow not healthy imo.

I've seen ppl use beef tallow to grease a pan to add some flavor. Sure it could be used end if the cook as well. Hard to beat hot and fast steak on lump charcoal with wood chunks, and melt a nice pad of salted butter while the meat rests.

You could get the real thing in Kyoto, JP.  We had to try the sampler.

Let steaks sit at room temperature for 30 minutes and rubbed with Killer Hogs The A.P. Seasoning.  Seared steaks and basted with Tallow and Garlic. Pulled at 135 and let rest 10 minutes. They were delicious.

I bought my Tallow at Amazon. Going to try the Wagyu Beef Tallow.
