Nice. I love making home made sushi. It always seems to really impress friends and family, and much cheaper. Good stuff.

Don't touch those. I'm hopping in my car right after this post. I figure three hard days of driving are needed for me to arrive at your front door. :lol:

Did you use sushi rice, short grain rice, or medium grain rice? My wife likes to use short grain rice. I ask her to use sushi rice, but she insists it's unnecessary. She was born and raised in Taiwan, so who am I to argue with her?

I use Nishiki rice, it's short grain. The best I can get around here. It's very nice.

I am not very good at making sushi,  very technical stuff.  Looks easy, but it's technical. 

I found a little rice cooker, so I get perfect rice every time. That helps.

And the salmon is farm raised. But still very tastie.

I've never tried making sushi, but one of my absolute favorite things to do with friends is go to a great sushi restaurant and order a giant variety of sushi. Everyone picks from the smorgasbord on the table while chatting, laughing, and having a great time. We order so much sushi there's no worry about anyone not getting their fill or worrying that anyone didn't. Then we just split the total bill (minus drinks). It's a great time. Wish I could do it more often than I normally get the chance to.

By the way, your sushi looks delicious, bladesmith.

I'm fairly certain we haven't used Nishiki rice before even though it's available everywhere. We used to buy San Hao Mi (Three Good Rice) which is pretty decent average rice. There's nothing special about it. That all changed when we ate dinner at a friend's home. The rice they served had a fuller, firmer texture that was not a result of cooking method, but a result of a superior variety of rice grain. We've used it ever since. It is TAMAKI GOLD Signature Quality California Koshihikari Short Grain rice (Try saying that quickly three times!). It seems to me it costs more than Nishiki.

Here is a Sushi idea for your next get together:

Rather than preparing multiple rolls of Sushi; cutting them all into the thin slices, and setting them out on platters, try placing all the possible fillers in dishes/bowls in the center of the table. Each diner is given a plate, chopsticks, fork, and spoon. Use the seaweed sheets that are approximately 2" square. Each diner takes a sheet; fills it with whatever ingredients are on the table; and folds the sheet over and pops the mini-sushi roll into his/her mouth.

The rice must still be prepared ahead of time using the rice wine, rice vinegar, salt, etc. The 2" sheets of seaweed paper are actually the very same ones that are sold as 'seaweed snacks'.

This method is a lot less labor intensive for the host/hostess and gets the diners involved in the creative process. It's great because everyone gets involved, chats the whole time, and gets to experiment with different flavors. I hope I did a reasonable job of describing what is in my mind. My wife and I enjoy doing this periodically. It works well for smaller dinner parties of six to eight people.

   Why not both?  :lol: Maybe someday we can get together and I'll roll some, but don't expect sushi master's quality though.  :icon_lol:
