The AES/EBU and the hdmi I2S output can handle the higher quality. I would use these higher rate outputs and only if the DAC doesn’t support that use the coax.
If the source stream is not of the highest quality you may not notice any difference compared to the coax output. Normally the technology for the higher quality is pushing the envelope wrt SNR and jitter and that advantage is always there but doubtful if you can hear it.
