I am a big prog fan, and in the 70's, and up to the present, some of the best prog is from non-English speaking countries.
Sure, everyone, even with just a passing knowledge of prog has heard of Yes, King Crimson, Genesis, and the other British bands. But in the 70's, other countries, especially Italy, produced music that rivaled the British bands. And since the music itself, conveys so much emotional and/or intellectual content on its own, very little (if any) is lost by not being able to understand the lyrics.
There is no way to list just a few favorite songs, since I rate quite a few at equal levels. Instead, I will list a few albums per band and per country/language.
Italy:
Premiata Forneria Marconi - Per Un Amico, Storia di un Minuto / beautiful melodies, incredible musicianship, complex.

Banco - Io Sono Nato Libero, Darwin!, Canto di Primavera / Great playing and composing. Vitorio Nocensi on keys rivals the chops of any of the well known Brits (Wakeman, Emerson).

Deus ex Machina (these guys sing in Latin)- De Repblica, Cinque, Equilibrismo da Insofferenza / Kind of straddles the line between fusion and prog, with touches of avant-garde. 5 octave voice be Alberto Priras.
Museo Rosenbach - Zarathustra / One of the best Italian prog recordings.
France:
Magma - KA, Mekanik Destruktiw Kommandoh (this band sings in an invented language called Kobaïa) / Inventors of the prog subgenres known as Zeuhl. Influenced by Coltrane's late period 'spritual' jazz, but filtered through 20th century classical. Every lineup of this band, from 1971 up though the present, has had terrifying levels of musicianship, and tons of emotion.
Eskaton - 4 Visions / One of the best Zeuhl bands, that is not Magma. Beautiful female vocals, otherworldly melodies.
Atoll - Musicians Magicians, L'Araignee-Mal / Slightly Yes and Genesis inspired prog.
Spain:
Triana - Hijos Del Agobio / Spanish prog bands had a unique take on the genre, by adding Flamenco influences.

I really appreciate Opeth's album In Caude Venenum where it was releases as both an English version and in Swedish. I guess I could treat it as a basic way to learn Swedish but it just sounds really damn good to focus on that.
