AdamM, I take it you really like the Apogee Ensemble interface. 

Do you - or anyone else - have any suggestions for a "poor man's Ensemble"?   Mainly hoping to keep the sound quality in the same ballpark but can get by with fewer inputs.

I myself use Digidesigns Mbox and have been very pleased with the results. Currently they have tons of different interfaces that work with a Pro tools rig. You can get a Mbox mini for 300$ that has 2 inputs line ins, and a mic input. I think that there are some programs that are pushing better features then pro tools, but it's ease of use and price keep it at a pretty high on my list...
