Poached Pear

Hey!

When to Astor Wine in NYC last week and saw some inexpensive riesling wines there so I picked up a bottle of Rheingau, Kreusch - 2009 riesling. So I made riesling wine poached pears yesterday. And this is what came out of the pot ....

Well, I made 5 pears, the rest are in the fridge for later  Actually I'm eating the one shown in the above picture right now!

Honestly I think I left the wine reduction just a bit too long on the burner... still good though.  :icon_lol: But I would prefer to have the sauce a bit lighter... OK next time.

Anyway, mmmm... that was one sweet savory pear.  8)

Take care,
Buddy :thumb:

Looks good! You know you can always add some liquid back if you over reduce...

Hey!

    Thanks.

Well, once you reduced it too much the taste will be different with a bit of burned or bitter taste and adding more liquid won't help with that.

It wasn't that bad with these,  just a bit darker in color but the taste was still fine... look like I turned off just in a nick of time  :icon_lol:

Take care,

Having an ice bath to dip the pan in and stop the cooking is always a good thing to have as well.
