Grilled salmon marinated in brown sugar and soy
« on: 22 Aug 2020, 11:34 pm »
Did a 2 zone cook on my PK grill

Used lump charcoal and a little peach wood for a light smoke

Marinated some salmon in a gallon freezer bad with brown sugar, soy, garlic, ginger powder, pinch of chineese 5 spice. Rested in the fridge for about 4 hours.

Put the salmon on the cold side/zone of the grill and let cook for about 20 minutes. Last 5 minutes I basted with maple syrup and honey. Little dust of seasoned salt.

Wish I was as good a audiophile as I was a cook :icon_lol:

It was killer!

Nice! I have been making a Salmon relish using a base of maple syrup, soy sauce and lemon juice, then diced habaneros and garlic, grated ginger, salt and pepper. I cook it and reduce the liquid a bit, cool it off and use it as a marinade with some of the relish on top, then save half of it and heat it up and put it on there after it's cooked. I have been using a cedar plank and lump charcoal grill...

Thanks guys. Timely post.

Funny... I have been on an Asian Salmon jag myself lately. Something similar to yours but I see some spices I need to add!
I've been doing the reverse sear thing as well.

I am so disgusted with the raping of the oceans that Salmon, shrimp and a few others are the only saltwater animals I eat anymore.
