I guess as an audiophile I am expected to know this, but I don't know what "double rail capacitance on all channels" mean? How does it improve the sound, etc? I have had a 5 channel x-Cherry I for about a year and I believe I have this feature.

This means there are two rail capacitors per channel instead of the normal one/ch.  We do this on 4-CHerry and 5-CHerry now.  2-CHerry and 3-CHerry have triple rail capacitance.  The more capacitance, the easier the amps handle significant transients.
