Smoking two turkeys for Thanksgiving

Our church is hosting Thanksgiving dinner today and I'm smoking two turkeys, an 18 lb in the cast iron Cook n Kettle on the rotisserie and a 21 lb on the Traeger. Here are pics of the the two turkeys and just as I put them on the grills. I prepared them last night with various spices and let them sit overnight in the fridge.

The 18 lb is on the right.

Never tried smoking those...can you get a decent buzz?

I used Apple and then Maple at the end. One hour at 180, 1 hour at 225 and 4 hours at 300.

Here's my Thanksgiving turkey. That was my first smoked turkey. I doubt I'll ever put on in the oven again.
I might do one for Christmas too.

Thanks Bob. Yours looks fantastic too. Bet it tasted marevlous! I know what you mean about never doing one in the oven again. We had 6 turkeys at our church Thanksgiving dinner, 3 were oven roasted, one deep fried and my two BBQ'd. The BBQ'd and deep fried were gone long before the oven roasted, not that the oven roasted were bad.

Yip, I sure am.
Today in fact will be the day (Friday). In about two hours, I'm going to fire up my trusty smoker.
We've got a twenty pounder and all the fixin's. I think I'll smoke some corn bread too. I'll letcha know how that turns out.  :thumb:

I'm trying to get wifey to let me smoke the chicken for the chicken and dumplins'.
The first time I brought the idea to her attention, I just got a cold stare. My hopes are low that she actually allows me to tweak one of her recipes.
I'm lucky she lets me smoke the turkey.   :lol:

Well.....  :oops:
Due to my complete lack of planning, as it turns out, I lack the vessel large enough to house a 20 pound bird to brine it. I didn't know ths until yesterday afternoon when I took it out of the package and made this discovery. So all I did yesterday was rinse it off, and put it in a pan, wrapped in plastic wrap in the fridge. Nothing more.

So here's my plan:
I've got the fire going right now (11:30am). I've got a stick of butter coming to room temp. I'll be using that butter and assorted spices and rubbing the bird with the herbed butter, both under the skin and on the exterior. My goal is to have the smoker running at 300-325. This is hotter than I wanted because I'm getting a later start than I originally wanted. I'll smoke the turkey until the skin is almost the color I'm looking for, then I'll "tent" it with aluminum foil. That way, the heat will continue to cook it, but it won't get any darker. The cavity will be stuffed with quartered apples, onions, and whatever else we happen to have that looks good. When the thickest part of the breast is about 10-15 before the target temp, I'll take the foil off and let it crisp up. Otherwise, it might be soggy from being under the foil. Also, as some point (whatever looks good), I'll put little foil "booties" over the wings so they don't burn. It serves no real purpose other that presentation.

I'm going to call this my lack of planning, lazy Thanksgiving turkey.  :duh:

Oh...as far as that glaze you asked about, all I did was use the turkey baster throughout the cooking process to keep the skin wet. No sugar used.
