Another vote for the external case with user-swappable drives, preferably having two or more drives (to upgrade the size).

I agree.  

If money is no object.  An external DASD (Direct Access Storage Drive) Ultra SCSI 320 15K RPM.  They are extremely fast compaired to IDE or SATA setup.  It is expensive.  
It can be populated with as many drive as you like.  A full rack will cost over $10K and sounds like a jet engine on first boot.
