Okay, so I got the Sausage, Peppers, and Onions;

What more does it need?

I mean what to put on top of the sausage peppers, and onions.

One can never go wrong adding sauted garlic and mushrooms
... and stay away from grappa. I was part of a crew that did some sailing off Sardinia. For some reason we would start the day with a shot of grappa before breakfast. It'll definitely wake you up, kinda like a slap in the face.

I would add the mushrooms, I like that combo.

I might be looking to add a slice or 2 of provolone or other cheese - but as an Irish guy that might through the whole thing off!

What is the bread/bun?

Second that, although I'd add red sauce and bake them with some cheese (one of the many Pecorinos would be nice; perhaps Asiago), and ditch the bread. Wheat and I don't get along. I would then add some hot sauce. That's it.
